I skip out on menu planning many weeks. This week though, we are packing and I decided I would not fall into the trap eating crappy because I was wore out. I will plan real meals and cook them regardless of what else we have going on. Why, because I anticipate we will be eating a lot of take out and junk while we are settled into our new house next week and I do not want to eat that way two weeks in a row. So without further ado, here is my menu plan for the week.
Monday – Barefoot Contessa’s Chicken Pot Pie. I have been craving a good potpie for a while now and I realized I needed to hurry up and cook one before it gets to miserably hot here in Florida. It was already in the mid 80’s last week.
Tuesday – A basic southern fried chop steak along with a mac-n-cheese and broccoli bake. A meal sure to please all of my kids.
Wednesday – I’m making it easy on myself by cooking a Hormel seasoned pork roast. I’m going to toss in some red potatoes and make a nice salad for the side.
Friday – After a long week of packing, I’m going with comfort food and making a Shepard’s pie.
Saturday – We may start moving this day, depends on how slow the utility companies are, so I have designated this day leftover or hodgepodge day.
Sunday – If we have not moved, I’m going to make pepper steak and rice. If we are moved or moving, we will probably order a pizza.
