My kids absolutely LOVE, and I mean LOVE, chickpeas (or garbanzo beans if like) and have been begging for them. Lucky for them the local co-op had them available to order for our pick-up this past Saturday so I promised to make some minestrone soup for my little fiends.
So I spent my day yesterday prepping lunches for the week (our continued effort to know out processed food) which included a big batch of the soup that they each just had to have a little bowl of last night.
I'm getting off easy on our Menu this week as the kids are heading out to my parents for the weekend so that we can have a MUCH needed date night (seriously it has been months) and get a little Christmas shopping done.
Eggs, Pancakes, Oatmeal, Breakfast Sausage, Fruit and cold cereal.
I pre-made big batches of minestrone and chicken noodle soups as well as some homemade chicken nuggets and spaghetti with marina. There is also some leftover black bean chili, butternut squash soup, great northern beans, turkey breast (smoked by the hubs) for sandwiches or salad.
Snacks & Sweets
Raw almonds and cashews, pistachios, pretzels, raw veggies or fruit, applesauce and because I'm still trying to clear the boxed processed food out of my pantry, some angel food cake cookies.
Monday - Sauerkraut and shredded pork with roasted sweet potatoes
Wednesday - Open Face Chicken Pot Pie over biscuits.
Thursday - Mini meatloaves, baked potatoes and green beans
Friday - Leftovers
Saturday - Date Night, Eat Out
Sunday - Family Dinner at my Parents
