"What ever happened to Sunday family dinners?" That was the question my cousin posted Facebook a little over a week ago. Maybe it's just a southern thing, and even though I didn't attend often, I miss them too. A matriarch of the family, whipping up a Sunday feast that brought everyone together for quality family time and happy, full tummies.
While we have no extended family around us right now, we opted to cook a Sunday dinner "feast" in lieu of going out to eat at our favorite Chinese buffet. Our buffet was graced by homemade vegetable Lo Mein, homemade egg rolls (these were SO easy to make,) mussels, clams, crayfish, bourbon chicken on a stick, pork dumpling and sushi we picked up at Kroger, which was surprisingly good.
The meal was delicious and everything a Sunday family dinner should be, but it left me at a bit of a loss as to what I was going to cook for the rest of the week.
On to the Food
Yesterday (Monday) - I made this recipe for Tuna Casserole (the no can, from scratch, real food version) only I added a nice big hunk of Gouda into my sauce, yum! I served it up with some fresh baked garlic kale chips and may have eaten thirds.
Tuesday - Citrus Thyme Pork Chops with rice, black beans and salad.
Wednesday - Per my oldest daughters request, Meatloaf with mashed potatoes, asparagus and a loaf of warm dark bread.
Thursday - Turkey Noodle Soup loaded up with carrots and peas. I use this recipe for homemade noodles, they are a family favorite.
Friday - Leftover Night
Saturday - Won-ton wrappers are going to make their way into tasty little cheese ravioli with a light tomato sauce, salad and crust loaf of fresh bread.
Sunday - It's Sunday Dinner time again! Rotisserie chicken, lima beans, roasted garlic potatoes and cornbread with some homemade pudding for dessert.
In addition to the dinners for the week, I'm going to have the kids in the kitchen with our copy of Math Chef, making Banana Blaster Muffins (percentages) and working on the lesson to divide an applesauce recipe before we turn egg roll wrappers into yummy baked pizza egg rolls for lunches.
Mmmmmm....Now I'm ready to eat!
