It is cold and rainy here in Virginia today, a perfect day for soup. I am so glad I looked ahead at the weather and planned a comforting soup for the day. It's also an easy go to meal, great for a week when I have planned on making things from scratch for the first time, including gnocchi.
Monday - Cheesy potato and broccoli soup with bacon crumbles and green onion to top it off.
Tuesday - Spaghetti with meat sauce and a salad
Wednesday - Turkey Noodle Soup, made with homemade bone broth leftover from Thanksgiving.
Thursday - Pork roast with gnocchi in brown butter sauce and purple kraut. I found this recipe for making gnocchi that I am excited to try out - How to Make Gnocchi: An Illustrated, Step-by-Step Recip
Friday - Beef tacos with topping bar, black beans and rice. I'm going to attempt to make tortillas for the first time. I keep hearing how EASY they are to make, so here's hoping!
Saturday - Leftover Buffet
Sunday - I'm not entirely sure yet, but I think I'm going to roast a small turkey (it's been calling to me from the deep freeze) and the sides will depend on what produce is on sale/available Saturday at the grocery store.
