Menu Plan Monday - In Dark Depths of Food Inventory


I try to menu plan every week, but the reality is that I am so much better at keeping a stocked freezer, fridge and pantry and just winging it according to our mood that day. This especially holds true for breakfast and lunch. 

The problem: I haven't done a great job of keeping said places stocked and found myself this week with no potatoes, no rice, no pasta....and well!

So as I write this post I am in the dark depths of doing a full food inventory and making a shopping list of everything we need while wondering how I ended up with so much of something else.  

An easy menu is the main focus for this week. Thankfully I have a free box coming from Blue Apron (courtesy of my mom) that helps with the planning this week.

Monday - Open Face Chicken Pot Pie on Biscuits (so I can use up some leftover rotisserie chicken)

Tuesday - Mexican Beef and Rice Casserole

Wednesday - Chicken and Penne Casserole with Salad

ThursdayCrock-pot Beef Stew 

Friday Thai Shrimp Soup with Coconut, Lemongrass & Red Curry

Saturday - Beef Bolognese with Fresh Pappardelle Pasta & Brussels Sprouts and a Salad 

Sunday - Pulled Chicken Tacos with Jicama & Avocado Salad
