Menu Plan Monday - Getting Away from the Junk
I had a bit of an epiphany this past week when I realized that I had gotten really lazy in the kitchen lately. Sure, I cook a healthy, mostly unprocessed dinner every night, but most of the days were filled with bowls of cereal, Chef Boyardee and nuggets for me and the kids.
Now, don't get me wrong, I'm not going to forsake the chef or the nuggets (I actually got 2 cans of the Chef at Winn-Dixie Saturday for .50 thanks to a rewards card coupon) but, we, the kids and I, be eating every day.
So, I made my way back to Plan to Eat (psstt...I'm an affiliate & earn a commission if you sign up too) and reactivated my account and went to work to find recipes that lined up with store sale prices for healthy (most of the time anyways) meals for breakfast, lunch and dinner that wouldn't leave the first born without a college fund.
I'm happy to say I did it. Here is my meal plan, that breaks down to $25 a day or a $5 a person a day. (cost does not include what was already available in my pantry)
Saturday - We had grilled steak (fantastic price at the local meat market) eggplant, zucchini and corn on the cob. Plus, I had the hubs grill enough of the veggies for other meals this week.
Sunday - Baked flounder, oven fries and salad.
Monday - Homemade pizzas, spinach and onion for the hubs and I, cheese and black olive for the kids.
Tuesday - Grilled burgers with toppings bar and pickles.
Wednesday - Scallops Provencal, herbed rice and steamed broccoli.
Thursday - Taco Bar night.
Friday - Mushroom ravioli in brown butter sauce and salad.
Saturday - Steak, loaded mashed potatoes and a still undecided veggie.
