Menu Plan Monday - January 2014 HelloFresh Time

I had the pleasure of reviewing HelloFresh this past November and we loved our box so much that we decided to get one once a month instead of paying to eat out with the kids. It has been proclaimed "Family Date Night at Home," though I'm hoping next month we can ramp the romance up a bit and set the kiddos up in the other room with their own meal and a movie while we partake in the whole candlelight and real adult conversation thing I hear so much about.

With this week being a HelloFresh week, my meal planning was rather simple. Though, as I type this we are all starting to get a pretty nasty head cold which may change everything on this list to some form of hot, good for you soup, because who wants to cook or eat a heavy meal with they have the funk?


Since I've been horrible at writing my menu post once a week, this week I am sharing my menu for the next two weeks. This works well for me since I plan our menu two weeks out anyways around our biweekly co-op order.


Dinners


Sunday - We had Beef Stew made with potatoes, carrots, green beans & red wine.


Monday - Broccoli & Cheese soup and crusty bread.


Tuesday - Slow Cooker pork loin (seasoning/style still undecided,) red quinoa cakes and peas.


Wednesday -Leftover Buffet


Thursday -HelloFresh Meal: Teriyaki Chicken with Coconut Rice and Baby Bok Choy.


Friday - Double HelloFresh Meal for Family Date Night: Seared Steak with Dijon Tomato Salad and Marble Potatoes & Lemon Roasted Mahi Mahi with Roasted Vegetable Ratatouille.


Saturday -We are heading to my parents for a birthday party and pig roast. Everyone is bringing a dish to pass and I plan on bringing the Cheesy Hashbrown Casserole (Like Cracker Barrels) from 100DaysOfRealFood.com.


Sunday - Roasted chicken and potatoes with zucchini.


Monday - Hearty lentil, kale and potato soup with salad.


Tuesday - Sloppy joes, oven baked fries and caramelized carrots.


Wednesday - Curried chicken salad in lettuce wraps.


Thursday - Tacos with topping bar and red quinoa with black beans & cilantro.


Friday - Pork Loin with baked mac-n-cheese and sauteed kale.


Saturday - Leftover Buffet (co-op pick-up day)

 

The quinoa recipes are new to me and hopefully good. I took a leap and ordered a pound of red quinoa from the co-op this week knowing that I really had NO clue what to do with it. If you have any really good quinoa recipes, please share!
